Blackened Salmon Stuffed with Spinach and Parmesan Cheese 
Ingredients:
For the Salmon:
4 salmon fillets, skin removed
2 tablespoons olive oil
1 tablespoon blackened seasoning (or Cajun seasoning)
Salt and pepper to taste
For the Spinach Parmesan Filling:

2 cups fresh spinach, chopped
1/2 cup grated Parmesan cheese
1/4 cup cream cheese, softened
2 cloves garlic, minced
1 tablespoon olive oil
Salt and pepper to taste
Directions:
For the Spinach Parmesan Filling:

Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
Add the chopped spinach and cook for 2-3 minutes until wilted. Remove from heat and stir in the Parmesan cheese and softened cream cheese. Season with salt and pepper to taste. Set aside to cool slightly.
For the Salmon:

Preheat your oven to 375°F (190°C).
Cut a pocket into the side of each salmon fillet, being careful not to cut all the way through.
Stuff each salmon fillet with the spinach and Parmesan mixture, securing the filling inside.
Rub the outside of the salmon fillets with olive oil, then coat each fillet with the blackened seasoning. Add salt and pepper to taste.
Heat a large oven-safe skillet over medium-high heat. Sear the salmon for 2-3 minutes on each side until the exterior is browned.
Transfer the skillet to the preheated oven and bake for 8-10 minutes, or until the salmon is cooked through (internal temperature should reach 145°F).
Serve the stuffed salmon hot with a side of vegetables or rice for a complete meal.
