Red Shrimp and Artichoke Risotto

Ingredients:

1. Large red shrimp: 4
2. Water: 50 ml
3. Olive oil
4. Salt and pepper
5. Artichokes: 2
6. Shallot: 1
7. Artichoke broth (made from scraps): 1 liter
8. Rice: 250 g
9. Parmesan cheese: 1 tablespoon
10. Lemon zest
11. Smoked burrata sauce

Instructions:

Shrimp Cream:

1. Clean the shrimp and blend the heads and shells with 50 ml water, a drizzle of oil, salt, and pepper.
2. Strain the sauce and set aside.

Artichoke Cream:

1. Julienne the artichokes.
2. Sauté the shallot in olive oil, then add the artichokes. Cover with water and cook for about 15 minutes.
3. Blend the mixture and set aside.

Artichoke Broth:

1. Prepare a broth with artichoke scraps and 1 liter of water. Boil for 30 minutes.

Risotto:

1. Toast the rice in a pan without fats.
2. When it starts to brown, deglaze with artichoke broth and add salt.
3. Mix in the shrimp and artichoke creams.
4. Cook for 12 minutes after adding the broth.
5. Off the heat, stir in olive oil, Parmesan, and lemon zest.

Garnish:

1. Season shrimp meat with salt, oil, and lemon zest. Place on top of the risotto.
2. Garnish with smoked burrata sauce and shrimp sauce.
