1/4 cup powdered sugar
2 tablespoons orange zest
2 tablespoons fresh orange juice
Orange food coloring (optional, for enhanced color)
For the Orange Glaze:
1 cup powdered sugar
2-3 tablespoons orange juice
Instructions:
Preheat Oven and Prepare Pan:
Preheat your oven to 350°F (175°C).
Line a jelly roll pan with parchment paper and lightly grease it.
Make the Cake:
In a bowl, beat egg whites until stiff peaks form. Gradually add 1/4 cup sugar while continuing to beat.
In another bowl, whisk egg yolks and 1/2 cup sugar until creamy. Mix in orange zest and juice.
Sift together flour, baking powder, and salt. Fold into the yolk mixture.
Gently fold in the beaten egg whites. Spread the batter evenly in the prepared pan.
Bake for 12-15 minutes until the cake is springy to the touch.
Roll the Cake:
Turn the cake onto a clean kitchen towel dusted with powdered sugar. Peel off parchment paper.
Starting from the short end, roll the cake with the towel inside. Let it cool completely.
Prepare the Filling:
Whip the heavy cream with powdered sugar and vanilla until it forms stiff peaks.
Assemble the Cake:
Carefully unroll the cake. Spread the whipped cream evenly over the cake.
Re-roll the cake without the towel. Place seam side down on a serving dish.
Prepare the Orange Cream Garnish:
Whip the heavy cream with powdered sugar until it begins to thicken. Add orange zest, orange juice, and optional food coloring. Continue to whip to stiff peaks.
Transfer to a piping bag fitted with a decorative tip.
Make the Glaze:
Mix powdered sugar with enough orange juice to achieve a pouring consistency.
Finish with Garnish:
Drizzle the orange glaze over the cake.
Pipe the orange cream along the top of the roll for decoration.
Chill and Serve.
