Zesty Italian Pasta Salad
Ingredients:
2 cups cooked rotini pasta
1 cup cherry tomatoes, halved
1/2 cup red onion, thinly sliced
1/2 cup kalamata olives, halved
1/2 cup diced cucumber
1/4 cup chopped fresh parsley
1/4 cup grated Parmesan cheese
1/3 cup extra virgin olive oil
3 tablespoons red wine vinegar
1 teaspoon dried oregano
Salt and pepper to taste
Crumbled feta cheese (optional for topping)
Instructions:
Combine Ingredients: In a large bowl, combine the cooked pasta, tomatoes, red onion, olives, cucumber, and parsley.
Prepare the Dressing: In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
Toss & Chill: Pour the dressing over the salad and toss to coat everything evenly. Sprinkle grated Parmesan and feta cheese over the top.
Chill: Refrigerate the salad for at least 30 minutes to let the flavors meld together.
Serve: Give the salad a quick mix before serving to redistribute the dressing and flavors.
