Sunshine Peach Cheesecake

This creamy dessert features a velvety smooth cheesecake base topped with fresh, succulent peach slices and a glistening peach glaze. Ingredients:
For the Crust:
1 1/2 cups graham cracker crumbs
1/3 cup sugar
1/2 cup melted butter
For the Cheesecake Filling:
3 (8 oz) packages cream cheese, softened
1 cup sugar
3 large eggs
1 tsp vanilla extract
1/2 cup sour cream
For the Topping:
4-5 fresh peaches, sliced
1/2 cup peach jelly (for glaze)
Instructions:
Prepare the Crust:
Combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a springform pan. Chill in the refrigerator while preparing the filling.
Make the Cheesecake Filling:
In a large bowl, beat the cream cheese with sugar until smooth. Add eggs one at a time, mixing just enough to incorporate. Stir in vanilla and sour cream.
Pour the filling over the crust in the springform pan.
Bake the Cheesecake:
Preheat your oven to 325ยฐF (163ยฐC).
Bake the cheesecake for 50 minutes. Turn off the oven and let the cheesecake sit in the oven with the door slightly ajar for 1 hour.
Remove from the oven and let cool to room temperature, then refrigerate for at least 4 hours.
Arrange the Topping:
Once chilled, arrange the fresh peach slices in concentric circles on top of the cheesecake.
In a small saucepan, warm the peach jelly until it liquefies. Brush or drizzle the jelly over the peaches for a shiny glaze.
Serve:
Keep the cheesecake chilled until ready to serve. Slice and enjoy the burst of peachy freshness with each creamy bite!
