Slow Cooker Beef Brisket with BBQ Sauce
Ingredients:
Beef:
– 1.5 – 2 kg (3 – 4 lb) beef brisket
– 1 tbsp olive oil (or a neutral oil like vegetable or canola)
Rub:
– 1 tbsp brown sugar
– 2 tsp paprika powder
– 1 tsp onion powder
– 1 tsp garlic powder
– 1/2 tsp cumin powder
– 3/4 tsp mustard powder
– 1 tsp salt
– 1/2 tsp black pepper
BBQ Sauce:
– 2 garlic cloves, minced
– 1/2 cup (125 ml) apple cider vinegar
– 1 1/2 cups (375 ml) ketchup
– 1/2 cup (110 g) brown sugar, packed
– 2 tsp EACH black pepper, onion powder, mustard powder
– 1 tsp cayenne pepper (adjust to taste)
– 1 tbsp Worcestershire sauce
Instructions:
Prepare the Rub:
Mix the rub ingredients together and rub all over the brisket. If time permits, refrigerate for 30 minutes to 24 hours.
Combine BBQ Sauce:
In a slow cooker, mix together vinegar, ketchup, garlic, brown sugar, and spices. Add the brisket, ensuring it’s submerged.
Slow Cook:
Cook on low for 8-10 hours until tender.
Prepare for Roasting:
Remove brisket onto a tray. Pour the liquid from the slow cooker into a saucepan and reduce over medium heat until syrupy.
Caramelize the Brisket:
Drizzle the brisket with oil and roast in a preheated oven at 200°C (390°F) for 15 minutes until browned. Baste generously with sauce, return to the oven for 5-10 minutes until caramelized.
Serve:
Slice thinly across the grain and serve with the remaining BBQ sauce.
