Strawberry Crunch Banana Pudding
Ingredients:
– 1 package (3.4 oz) instant vanilla pudding mix
– 2 cups cold milk
– 1 cup heavy cream
– 1/4 cup powdered sugar
– 1 teaspoon vanilla extract
– 4-5 ripe bananas, sliced
– 1 pint fresh strawberries, sliced
– 1 package (11 oz) vanilla wafers
– 1/4 cup freeze-dried strawberries, crushed
– 1/4 cup butter, melted


Directions:

1. In a large bowl, whisk together the instant vanilla pudding mix and cold milk for 2 minutes. Let it set in the refrigerator for 5 minutes.

2. In another bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Gently fold the whipped cream into the set pudding mixture.

3. In a food processor, pulse the vanilla wafers and freeze-dried strawberries together until they form coarse crumbs. Mix in the melted butter until combined to create the strawberry crunch topping.

4. In a large serving dish or individual cups, layer the sliced bananas, followed by a layer of the pudding mixture, then a layer of sliced strawberries.

5. Repeat the layers, finishing with a generous layer of the strawberry crunch topping on top.

6. Refrigerate for at least 2 hours before serving to allow the flavors to meld together.
